Founded as a shellfish stall in 1742 and on Jermyn Street since 1984, Wiltons is the rare London room that does not perform tradition, it simply continues it. Oysters from the West Mersea bed, grouse from August, dover sole filleted at the table, a wine list led by claret. Jacket required, mobile phones discouraged, lunch the appointment to keep.
