Inside Hotel Margherita, M'Ama ("the one I love loves me") sets chef Raffaele Mascolo's seasonal Mediterranean cooking on a terrace suspended over the sea. A member of the Slow Food Cooks' Alliance, the kitchen sources from small Campanian fishermen, farmers and cheesemakers and keeps dedicated vegetarian and gluten-free menus. Quietly one of Praiano's most reliable dinners.
