After holding two stars at its former country location, chef Fernando Pérez Arellano relaunched Zaranda inside the old-quarter Es Príncep hotel, now with one Michelin star. Long, theatrical tasting menus move through several spaces, partly over the glass-floored remains of a medieval tannery. It is the city's most ambitious and immersive haute-cuisine experience.
