Chef David Olivas, fourteen years at Dani García's side before going solo, runs this modern bistro just off the old-town centre and has held a Michelin star since 2023. His "Entorno" menu gives a bold, often witty contemporary spin to traditional Andalusian dishes with a global edge. Ronda-born sommelier Fabián Villar curates an adventurous cellar and a cheese trolley worth saving room for.
