A tiny standing-room paninoteca off Borgo Sant'Ambrogio that has fed Parma since the 1950s, born to feed crowds leaving the Teatro Regio. The board changes every morning: the Carciofa tart of ricotta, Parmigiano and artichoke sells out first, the Spacca Balle roast-beef panino is the workhorse, and the cavallo crudo with raw horse is the local rite of passage. No tables, no fuss, only a queue worth joining.
