Opened in 1820 and reputedly the city's oldest bar, Marsella still pours absinthe with the full sugar-cube-and-water ritual beneath peeling frescoes and antique mirrors. The patina is real, the crowd a mix of curious and devoted regulars. It is atmosphere earned over two centuries, not manufactured.
