Founded in 2012 as a bakery workshop opposite the Conde Duque cultural centre, Panic blends classic technique with long fermentation to turn out some of Madrid's most respected sourdough and pastry. A small, serious bread operation rather than a cafe. The neighbourhood's daily-bread institution.
