Where to Eat in Madrid?
Madrid reads as a layered city: a high-altitude avant-garde tier at the top, a deep bench of barrio classics underneath, and a strong fine-dining middle that has grown sharper every year. The headline act is DiverXO, Dabiz Muñoz's avant-garde tasting menu up the Castellana in Chamartín, which carries three Michelin stars and sat at No. 4 on the 2025 World's 50 Best list. But the city's real character is in how comfortably the experimental top and the old guard coexist, often within a few blocks of each other.
Geography sorts it cleanly. Barrio de Salamanca is the editorial-class concentration: Saddle and Ramón Freixa Atelier for contemporary fine dining, Kabuki and 99 Sushi Bar for the city's serious Japanese tier, plus Muñoz's own riotous StreetXO and the seafood of El Pescador. Barrio de las Letras holds the historic spine, with Lhardy and the old taberna Casa Alberto, alongside newer market cooking at Triciclo and Gofio's Canary Island menu. Chamartín, up the Castellana, is where the avant-garde flagships live, DiverXO and VelascoAbellá among them.
The Two Madrids
Expect to spend across a wide arc. The avant-garde tasting menus run well into three figures per head before wine, while a casa de comidas like Casa Dani, beloved for its tortilla, keeps lunch firmly in everyday territory. The Japanese-led counters at Kabuki and the Yúgō room in Letras occupy the polished middle. Wine lists lean Spanish with real depth in Rioja and Ribera, though the better lists now range freely across the peninsula.
Reservation Tips
DiverXO is the hard table; its booking window opens months ahead and fills almost instantly, so plan well in advance. For the Salamanca and Letras fine-dining tier, two to three weeks is usually enough. Madrid eats late, lunch from around 2pm, dinner rarely before 9pm, and the city empties in August, when many kitchens close, so spring and autumn are the comfortable windows.
