Frédéric Simonin trained at Ledoyen, Le Meurice and Joël Robuchon's three-star rooms, became Meilleur Ouvrier de France in 2019, and runs his eponymous one-Michelin restaurant on rue Bayen in the 17e as 'a Parisian apartment', hardwood floors, white walls, beveled mirrors, no theatrics.
