La Mascotte opened on rue des Abbesses in 1889 and has run continuously since, a working brasserie at the heart of the village-Montmartre that Sacré-Cœur tour groups never quite find. The shellfish counter (closed only July-August for heat) is the centerpiece; the Cantal farm charcuterie is the second move; the Coupe du Meilleur Pot 1999 (Académie Rabelais's wine-bar prize) sits on the wall. Open daily noon to midnight with continuous service. For an Istanbul visitor who wants the actual brasserie that the actual Montmartre eats at, not the tourist version, this is the address. 136 years of continuous operation make the cult-institution exception straightforward.
