The repertoire is uncompromisingly classical, Saint-Honoré, Mont-Blanc, mille-feuille, Chiboust, religieuse, lemon tart, executed with Japanese-grade precision and finish. Winner of M6's Meilleur Pâtissier des Professionnels 2018, recurring La Liste pastry-awards mention, cookbook author with Gateaux: Sweets (2024). The Saint-Honoré is the order pastry chefs send each other for. Boutique-only with a tiny counter; Duroc or Sèvres-Lecourbe metro.
