Down a few steps on one of the Old Town's emblematic streets, Bodegón Alejandro is a stronghold of unfussy, seasonal Basque cooking and a kitchen that once helped shape the young Andoni Luis Aduriz. Fried anchovies, cod pil-pil with crab, Iberian pork loin: the carte reads like a primer in Donostia home cooking, executed with care rather than fireworks. A quietly serious counterpoint to the pintxo crawl above ground.
