Chef-owner Nejmettin 'Neco' Kılıç trained in San Sebastián and has run La Pasion since 2008 in a restored 300-year-old stone building on the alley that locals call Spanish Street, off Atatürk Caddesi in old-town Bodrum. The kitchen still works without the costume tricks the rest of the country attaches to Spanish food: pintxos at the bar, jamón cut to order, paella properly socarrat, a sherry list that runs past the manzanilla. The peninsula's only Spanish room that an İstanbullu who knows San Sebastián or Madrid wouldn't apologise for.
Editor's Tip
Sit at the bar, order a Tio Pepe and three pintxos before deciding on the paella, Neco still cuts the jamón himself most nights. The stone alley is the room.
