Karafaki Erhan Usta has worked the Gümüşlük waterfront since 1983, Erhan Usta's name is the brand, his 38-plus seasons of day-boat knowledge are the menu, and the long stone terrace under the nazar-strung tree sits a metre from the water. The kitchen is straight Aegean fish-and-meze grammar: whatever the morning boats brought in, grilled simply, mezes from the garden, raki cold. The crowd is half Istanbul summer-house, half European yacht crew that has figured out you do not have to drive to Türkbükü for a serious sea-bass dinner, and the room has stayed on chef rather than spectacle through four decades of peninsula churn.
