| Last reviewed: May 2026 The address dates to 1832, the current dining room to 1898, built for the 1900 Exposition Universelle, with woodwork, painted mirrors and Picard pâte-de-verre that earned the room its classification as a historic monument. Reopened in 2019 as a bouillon (the working-class Belle Époque format Bouillon Pigalle revived), it serves Norman classics, andouille, tripes à la mode de Caen, calf's head, at modest prices, daily noon to midnight, no reservations. The Pigalle/Chartier bouillons are already in the chapter; this one is the genuinely beautiful, unspoiled version, on a side street near Les Halles.
