The Officina Profumo-Farmaceutica, a working pharmacy since the 1600s, still bottles its tinctures here; J.K. Place sets the city's most refined small-hotel tone on the piazza; the Manifattura cocktail bar revives all-Italian aperitivi, and Il Latini keeps the boisterous Tuscan table alive. Look past the souvenir belt near the tracks and it becomes genuinely elegant.
