Opened in 1989 by Swiss-Italian chef Pietro Leemann, Joia became the first vegetarian restaurant in Europe to earn a Michelin star (1996) and has held it since. Zen-influenced, micro-seasonal and largely vegan and gluten-free, its legacy now rests with chefs Sauro Ricci and Raffaele Minghini. Quiet, philosophical, deeply serious cooking.
