Set in a converted 1920s tomato cannery right on the black-sand shore between Kamari and Monolithos, Yiannis Paraskevopoulos's estate is the spiritual home of mineral, age-worthy Assyrtiko. The flagship Thalassitis and its barrel-fermented sibling are pours that wine critics build trips around, alongside an extraordinary undersea-aged cuvée. Tastings come with cheese and cured-meat platters rather than a full kitchen.
