The island's cooperative, founded in 1911 and representing some 1,200 growers, Santo is the custodian of Santorini PDO at scale and a reliable showcase for Assyrtiko, Nykteri and Vinsanto. The cliffside terrace above the caldera is one of the great sunset perches, with a full restaurant serving meze and local plates alongside tasting flights. It is high-volume and unabashedly touristy, but the wines and the volcanic authority behind them are the real thing.
Open year-round with extended summer hours; expect tour-bus crowds at sunset, so book a table or an early-afternoon flight.
