Peruvian chef Carlos Camino runs a chic, contemporary room with an open kitchen, cooking a sincere French-Peruvian cuisine that has earned one Michelin star. Expect striking flavours and textures — hierba luisa ceviche, tiger's milk with black cocoa, palo-santo-braised squid — built on top-class produce and real conviction. The most distinctive cooking in the city's fine-dining ranks.
