Opened 2017 by the Moussié brothers at 22 boulevard de Clichy, Bouillon Pigalle is the modern flagship of a 19th-century Parisian format, democratic, fast, cheap, French, that almost died and now feels essential again. Œufs mayo for two euros, blanquette de veau and bavette frites under fifteen, a 300-seat room that turns over twice a service. The queue down the boulevard is part of the architecture: no reservations for the original. Le Monde, Le Figaro and the Sortir guides have all written approvingly. For an Istanbul visitor curious how Parisians actually eat on a Tuesday night without ceremony or markup, this is the test.
