The only Michelin-starred table in this stretch of the north-east coast, set within the Baglioni Resort just north of San Teodoro, beside the Tavolara marine reserve. Milanese chef Claudio Sadler reads Sardinian produce through a precise, contemporary lens: a seven-course tasting that runs from raw shellfish to chargrilled eel glazed in Cannonau and myrtle. Tables look onto garden and pool, and the cooking stays disciplined where resort restaurants usually drift.
