Lucas Carton

Lucas Carton has occupied 9 place de la Madeleine since 1839, and the Majorelle Art Nouveau woodwork is a classified Historic Monument. Chef Hugo Bourny, who succeeded Julien Dumas in 2021, runs a one-Michelin programme defined by aromatic, spice-led, vegetable-leaning composition that deliberately echoes the room's Art Nouveau geometry on the plate. A bistro counterpart was added on the ground floor, but the upstairs gastronomic room is the reason you book, it is one of the few places in Paris where the architecture, the menu register and the service tempo all line up to a single decade somewhere between 1900 and now.
