The Ritz's wood-paneled cocktail room, bookless reservations and a serious dry martini
Bar Hemingway sits in the Ritz Paris off Place Vendôme and refuses reservations, you queue at the door from 17:00 sharp and bartender Colin Field's successors will pour you a martini that has held its standard for decades. The room is small, wood-panelled, lit like a study, with photographs of Hemingway and Fitzgerald and a roll-call of cocktails the bar claims to have invented. Order the Serendipity (Calvados, mint, apple juice, champagne), the Ritz 75, or the dry martini. The €1,500 Ritz Sidecar (pre-phylloxera cognac) is for show, ignore it. Drinks are around €34.
Arrive at 17:00 for the first seating, by 18:00 you're queueing thirty minutes. Smart-casual minimum; jacket recommended for men.
