Within the Kızlarağası Han, İzmir's grandest surviving Ottoman caravanserai, Turkish coffee is brewed the old way over hot sand at the courtyard counter. It is the one han stop worth keeping: the coffee, not the carpets, is the reason to sit. A genuine ritual rather than ambiance-over-product theatre.
