Sommelier Marcos Granda's one-Michelin-starred counter seats just ten, where itamae Manuel de Bedoya works an itamae-style omakase that moves between Japanese precision and Mediterranean product. The room is pure line and silence, the antithesis of the marina a few kilometres west. Granda's wine and sake list, drawn from the same intelligence behind two-star Skina, is the rare cellar that earns its menus.
