Founded by Raymond Berthillon in 1954, this glacier became a Paris myth in 1961 when Gault Millau wrote of "this astonishing ice cream shop hidden in a bistro on the Ile Saint-Louis." Three generations on, the Chauvin family still makes everything in-house from natural ingredients with no preservatives, and the line on rue Saint-Louis-en-l'Île still stretches across the bridge. Skip the imitation-Berthillon scoops sold by neighbouring cafés; the boutique itself is the only address that matters. A single-product shop, run with unembarrassed conviction.
