Mickaël Benichou opened Liberté on rue des Vinaigriers in 2013 in a 19th-century shop with painted ceilings, exposed beams, antique mirrors and a long marble counter that holds the day's bread, pastry, viennoiserie and tarts in one open arrangement. The format, patisserie-boulangerie under one roof, pastry chef and bread baker working the same room, was novel for the 10e at the time and set the template that the Canal Saint-Martin generation followed. Babka with dark chocolate, baguette de tradition, lemon tart, and a viennoiserie programme that anchors the Sunday queue. Walk-in counter; ten minutes from Gare de l'Est on the canal-edge stroll.
The chocolate babka is the order. Sunday morning the queue runs to Gare de l'Est; weekday afternoons quiet.
