Charles Compagnon's 52 Faubourg Saint-Denis sits at the noisier, more diverse end of the 10e, bare concrete and exposed stone, a fully open kitchen, no reservations. The cooking pairs bistro classics (pâté de campagne, leeks vinaigrette) with Asian-leaning plates that read as natural extensions rather than fusion: nuoc-cham dressings, citrus, herbs, fish lightly cured. The wine list runs to natural and low-intervention bottles; the coffee is roasted in-house. It's open all day, which makes it the rare neo-bistro you can use for a 16:00 plate without apology. Compagnon's group also runs Café Compagnon nearby.
Walk in at 15:00 for a plate and a glass, that's when the room is at its best.
