The Centro pintxo room chefs slip into on their day off
Open since 1995 just off the shopping streets of Centro, this three-table bar runs on precision more than volume: an immaculate tortilla, a chalkboard of hot dishes, kingprawn ravioli in Martini sauce and crisp oxtail. It sits outside the Old Town tourist churn and is widely cited as a chefs' favourite. Small, serious and worth the wait at the bar.
Stand at the bar, order the tortilla and the oxtail. Sundays closed; midday is the sweet spot.
