Sidrería Petritegi
A six-generation cider house and the full txotx ritual.
Five kilometres from the city in cider-country Astigarraga, Petritegi traces its press back to 1526 and six generations of the Otaño-Goikoetxea family. The classic sidrería menu runs cod omelette, cod with green peppers and a vast charcoal-grilled txuleta, all washed down straight from the barrel at the cry of txotx. It is one of the most established of the Basque cider houses, open year-round and built for boisterous shared tables.
Editor's Tip
Go in a group, do the txotx ritual at the barrels, and pace yourself before the txuleta lands.
