The flagship room of the five-star Makedonia Palace, Salonica has anchored the city's fine-dining since 2017 under chef Sotiris Evangelou. The clearly Greek menu changes each season and rotates thematic dishes drawn from Macedonian, Cycladic and Cretan cooking, sent out from an open kitchen with a panoramic sweep over the Thermaic Gulf to Mount Olympus. In summer the table moves to the seafront garden.
