A honey-stone market town in the south-east where serious, produce-led cooking keeps a slow rhythm.

Santanyí sits inland in the island's south-east, a market town of honey-coloured sandstone that gave Palma's cathedral its stone and still keeps a slow, agricultural rhythm. The Wednesday and Saturday markets draw the whole district to its squares, and outside those mornings the town is quiet, its lanes lined with galleries, a few good bakeries and restaurants that lean on the produce of the surrounding fields and the nearby coast. Dining is unfussy but serious: courtyard tables, short menus built around what the land gives, and a clientele that includes a long-settled northern-European contingent. It is the kind of place you eat slowly because nothing is rushing you out.
