Hervé Pronzato, Nice-born, trained at Le Cinq in Paris and at Capsis in Athens, opened his eponymous Kifissia restaurant in 2017 and the Michelin star arrived in the 2024 Greece cycle. The kitchen reads as a French-Greek hybrid: classical-French technique applied to Greek sourcing (Cretan greens, Symi shrimp, lamb from the Pindos). The dining room is twenty-six seats, white-tablecloth, the kind of formal-but-not-stiff register the audience reads from a Saint-Germain bistro. Tasting menu only at dinner; à la carte at the lunch service the kitchen runs Thursday through Saturday. The Kifissia Michelin axis (with Birdman) makes a tram-ride day-trip a structurally serious idea.
Pair with Birdman on the same Kifissia trip, Hervé lunch, walk Kifissia, Birdman dinner. Or split the booking across the trip. Lunch tasting at 95 EUR is one of the city's better mid-Michelin value plays.
