Mimoza has held the Gümüşlük seafront for over three decades and remains the reference point for what an Aegean fish restaurant should be: a long stone terrace at the water, day-boat catch chalked on the board, mezes that change with the season. The crowd is half summer-house Istanbul, half discreet European yacht, and the kitchen has never softened to either.
