Benusen has worked the Kadıköy çarşı since 1974, founded by Mevlüt Öztunç, and the case still carries things most meyhanes have dropped: topik, çiroz, a mustard-sauced levrek marin among thirty-odd mezes. The five-piece fasıl plays upstairs on weekends while the ground floor stays a drinking-and-talking room, which is exactly the right division of labor. Prices remain from another decade. If the çarşı has an institution left in the old sense, it is this one.
