Sager + Wilde opened on Hackney Road in 2013, Michael Sager and Charlotte Wildeve's industrial-cool corner room with a list that ran heavy on grower Champagne and Loire long before either was a London cliché. The model is roughly: come for a glass, stay for two, eat the cheese-and-charcuterie or one of three hot plates. The list is short, well-priced, and rotated weekly. The room itself, concrete, exposed brick, tiled bar, set the visual template that half of East London's wine bars copied. The chapter's natural-wine anchor north of the river.
Walk-in only, the room takes thirty-something at a stretch. Tuesday and Wednesday evenings are when staff pour the most adventurously. Pair the visit with dinner at Brawn five minutes east; the two together are the East-London natural-wine night.
