The frescoed riverside auberge that Paul Bocuse made the most famous restaurant in France, now two Michelin stars under chef Gilles Reinhardt. The classics are untouched on purpose — the black-truffle soup V.G.E. under its pastry dome, the Bresse hen in a bladder, the dessert trolley that does not end. A pilgrimage more than a meal, and worth the trip north of the city.
