Yannick Alléno's three-Michelin flagship occupies the historic Pavillon Ledoyen (1779) in the gardens at the eastern end of the Champs-Élysées, at 8 avenue Dutuit. The kitchen is built around Alléno's research into 'extractions', cold-distilled sauces and jus that re-engineered what French sauce can taste like, and the dining room sits inside one of the most decorated culinary addresses in the world (the building hosts three starred restaurants under his group).
