Christian Le Squer has held three Michelin stars at Le Cinq for over a decade, working out of the Four Seasons Hotel George V at 31 avenue George V. The Breton chef builds dishes around impeccable seafood and a sauce-and-extraction technique that reads as the contemporary reference point for classical French gastronomy. The dining room, gilded eighteenth-century volumes, a courtyard view, is the Paris palace template; this is where you go to understand what the city's grand tables actually mean today, not where you go for novelty.
