Run by the Gargioli family since 1961, this tiny dining room is one of Rome's reference points for cucina romana done without compromise, carbonara, coda alla vaccinara, offal, spring lamb and a famous sour-cherry tart. The post-Tucci crowds are real, but the kitchen's pedigree and Michelin Guide standing keep it defensible. Book well ahead.
