Opened in 1952 by the Tsarouchas brothers a step from the Roman Agora, this is the city's definitive patsatzidiko, where patsas, the Greek tripe soup of the Balkans and Anatolia, is finished a la minute with lemon, oil, garlic and onion. The bright room runs around the clock to the rhythm of the tripe-master's cleaver, feeding night owls and morning workers alike. The family has even petitioned to have patsas recognized as national heritage.
