Two Michelin stars inside Palais Coburg, Austria's deepest wine cellar.
Silvio Nickol earned the second Michelin star at Palais Coburg in 2012 and has held two ever since. The Palais itself, the nineteenth-century Coburg-Kohary residence on Coburgbastei, now a 35-suite Relais & Châteaux hotel, holds one of the deepest wine cellars in the world: 60,000 bottles across six vaults, including a vertical Pétrus run from 1934 onward and a Romanée-Conti library that runs decades deep. The cooking is classical-French in technique, Austrian in sourcing, and meticulous in execution; six- and eight-course tasting menus, no a la carte. The room is opulent without being theatrical, chandeliers, brocade chairs, the kind of formal register that Vienna does better than almost any other European city.
The wine pairing is the point, ask for the cellar tour before service if scheduled. The Palais's other restaurant, Clementine, is the all-day brasserie and reads on the same wine list.
