Bànôi (the name means grandmother) opened on rue Amelot in 2017 as the modern-Vietnamese answer in the 11e, between Bastille and the Carreau du Temple Marais edge. The signature is fresh spring rolls, seven or eight versions on the menu, vegetarian to salmon, dipped in house sauces; the broader card runs the South-East Asian register with care.
