The set tasting menu changes weekly, the wine list ferments naturally, and the booking window opens 21 days out at 10:00 Paris time and closes within minutes. The room itself is calm wood, white tablecloths replaced by linen, an open pass at the back. The chapter's neo-bistro anchor, and the canonical answer when the audience asks where the booked-out generation actually eats.
