Omar Koreitem and Moko Hirayama, the husband-wife duo behind cult Mokonuts, turned their Charonne sandwich shop into Paris's most interesting chef-residency room. Each guest chef stays anywhere from a few weeks to nine months and runs a full menu under their own name: Marcel Khalil Hanna's Palestinian kubbeh and grilled lamb's liver, Erica Paredes's crispy Filipino chicken, Italian chefs slipping veal-brain ravioli with bottarga onto the daily list. The Mokonuts production values, sourcing, bread, pastry, carry through every residency. Fooding 2025 named the Mokonuts/Mokoloco/Mokochaya group 'Honorary food.' The room is small, loud, open-kitchen, book before you fly in.
