The Alajmo family, three Michelin stars at Le Calandre in Padova, landed Caffè Stern inside a former letterpress in Passage des Panoramas, a 19th-century covered arcade classified as a historic monument. Philippe Starck handled the restoration: original 1834 woodwork, Murano chandelier, etched-glass partitions. Chef Alessandro Fornaro plates Massimiliano Alajmo's Veneto repertoire alongside his own, vapor-cooked pizza with bottarga and asparagus, lasagnetta amatriciana with toasted-flour pasta, hazelnut-coffee tiramisù. GaultMillau-listed, Michelin Guide-listed. The pasta-trattoria upgrade Istanbul's Italian visitors don't know they need until they sit down.
