Chef Masayoshi Hanada works alone at the pass, letting fish from Brittany, Normandy and the Mediterranean rest to its peak before slicing nigiri to a temperature you don't argue with. The room sits a cobblestone street off Place Louvois, near the old Bibliothèque Richelieu, diplomats from the nearby ministries, off-duty Michelin inspectors, the occasional Japanese editor in town for Fashion Week. One Michelin star since 2018, held through 2025-26. Reservation is one of Paris's hardest tables under fifteen seats; book three weeks out, arrive on time, leave silent.
