On a Wentworth Street side road behind Liverpool Street, an unmarked door beside an old tailor's shopfront leads down to a single low-ceilinged room of exposed brick, twenty-something seats and one of the most-respected cocktail programmes on the City fringe. No menu of show-off serves, a tight house list of properly built classics, a rotating short menu of originals, and a bartender who will steer the room.
