Zuma has spent a decade at the western end of Palmarina and runs to the same standard the London and Mykonos rooms do: a properly staffed robata, a sushi counter the chefs come down from London for, a list of premium sake that is genuinely reached for. It is the only Japanese kitchen on the peninsula that an İstanbul guest who eats at Zuma at home will not raise an eyebrow at.
The robata side of the menu is what makes the trip, black cod saikyo miso and the spicy beef tenderloin in particular. Bar tables at the western end of the deck face the sunset; book the second seating after 21:30 to land it.
